Parsnips

(Pastinaca sativa)

Umbelliferae family

Parsnips resemble and are related to carrots, though they are in different genera. Parsnips are native to Eurasia and have been cultivated in North America since colonial times. They have a long growing season and have similar cultivation requirements to their orange-fleshed cousin.
